Stevia Sweetened Chocolates

Stevia Sweetened Chocolate
Don't be fooled, my friends. These are not your average chocolates.

When drug addicts are in rehab, they are actually encouraged to smoke cigarettes as a way to curb their destructive cravings. I think these chocolates are my cigarettes. I wrote in the past about avoiding sugary sweets, desserts, candy, etc... for thirty days, however it was a complete bust. During my effort, the cravings were pretty severe. Credit goes to my mother-in-law for giving me this recipe for all natural, no-sugar chocolates, which are made with stevia. Unlike alternative options, such as agave or honey, the body does not process it like regular sugar. While they don't taste like a Hershey bar, they are a decent substitute.

The ingredients you need are:

- Sweet Leaf Vanilla Creme
- Refined Coconut Oil
- Carob Powder
- Unsweetened Baking Chocolate (I used Ghiradelli)
- Cocoa Powder (optional)

Chocolate Mix BowlMelt four or five tablespoons of coconut oil either on the stove or in the microwave to get it to a liquid consistency. Then melt one and a half squares of unsweetened baking chocolate.

Mix the liquid coconut oil with the melted chocolate in a medium sized bowl.
Then mix in 1 tbsp carob powder and 1 tbsp cocoa powder.*
Add about 1/4th of a teaspoon of the vanilla creme stevia.**
Mix it well with a fork, spoon, or whisk.
(You can also add in nuts or coconut or small bits of fruit.)

*The cocoa powder is optional. It just makes it a little more chocolatey.
** This will most likely be a personal choice, since you might like it a little more stevia-ish than me. I add a little less than 1/4th of a teaspoon and am pretty happy with the results.

Pour the chocolatey mixture into an ice cube tray. I used this "ninja stars" tray, as my husband calls them, from Ikea. Put them in the freezer for 15 minutes.

No Sugar Chocolates
After 15 minutes is up, pop them out and you have stevia chocolates. It's important to keep in mind that these need to stay refrigerated or frozen. They don't have preservatives and they will melt. (The pink sugar on top is leftover from my naturally dyed pink sugar.)

They aren't made like normal chocolates, so don't expect them to taste like normal chocolates, but my 19 month old daughter was pretty thrilled with them. Give them a try and let me know what you think!
